This device called essencer separates the oil from the water automatically, the oil has a different density than water and is deposited at the top.
At the top it has a kind of inverted funnel that concentrates the oil that floats on the surface of the hydrolats, the essential oil comes out through the small valve and the excess water comes out through the large one.
